Combine 1/3 cup of juice or brine with 2 tablespoons of tahini sauce, 1 minced garlic clove, and 1/4 teaspoon of cumin in a food processor. Puree until smooth, then add chickpeas and continue to puree until desired consistency is reached. Season with salt and pepper to taste. Serve with pita chips or veggies.
2. Roasted Red Pepper Dip
Combine 1/4 cup of juice or brine with one 8-ounce package of cream cheese in a blender, and blend until smooth. Season with salt and pepper to taste. Serve with pita chips or crudites.
3. Roasted Red Pepper Soup
Combine 4 cups of juice or brine along with an additional 8 ounces of water in a saucepan over medium heat.
